Our Philosophy

Tokugawa takes its name from the Japanese Emperor known for his appreciation of fine arts and refined taste. This connection reflects our commitment to excellence and attention to detail in everything we serve.

We focus on traditional Japanese cooking techniques using ingredients sourced directly from Japan's Toyosu Market and select Northeast suppliers. The menu changes with seasonal availability, allowing us to work with each ingredient at its peak.

Our omakase experience showcases our chefs' technical precision and creativity. Each course is designed to balance flavors and textures while highlighting the natural qualities of premium ingredients.

Our sake selection is chosen specifically to complement our food offerings, with staff knowledge to guide you through appropriate pairings.

Tokugawa is located at 79th and Madison on the Upper East Side. Our 12-seat counter offers guests a view of our chefs' work, where they can experience omakase and à la carte options. The main dining room accommodates both casual meals and special occasions
